Directions:

In a non-reactive (glass or ceramic) mixing bowl, combine peaches, tomatoes, red onion, cilantro, lime juice, jalapeño, garlic, olive oil, salt, and pepper. Gently toss to combine; cover and refrigerate in an airtight container until ready to serve. Will remain fresh for 3-4 days in the refrigerator.

Kids Can Cook Tips:
Younger: Wash fruits and veggies, pick cilantro leaves off the stem and tear cilantro, measure oil, lime juice (first squeezing lime to create juice), and salt and pepper. Gently toss all ingredients together.
Older: If those with knife skills, dicing peaches and veggies. May want an adult to seed and dice jalapeño, unless careful to wash hands and avoid touching eyes. Garlic may be minced using a microplane.
