Fierce Foods Fact: This balanced protein and carbohydrate snack is perfect for fighting off the mid-afternoon low energy crisis. It is loaded with heart-healthy anti-inflammatory Vitamin E thanks to the almond butter. It also has almost 4 grams of fiber to help support a healthy microbiome.

Directions:

Wash the apple and slice into ¼-inch rings. Using a 1-inch cookie cutter (we used stars but any shape can be used), cut out the center of apple slices that have seeds still in them. This will be the top slice for the sandwich.

Spread 1 tablespoon almond butter on one apple slice that does not have seeds in the middle (your bottom slice), and top with 1 tablespoon of granola.

Place the apple slice that had the center seeds and core removed by the cookie cutter on top. Enjoy immediately or spritz lightly with lemon juice to keep the apples from browning.

Use within 1-3 days.
